Handi Gongura dum biryani has become a popular flavour in recent days. Gongura/ Roselle leaves biryani tastes completely different from the traditional hyderabadi dum biryani because of its special tangy flavour. We continue the tradition of overnight marination of Lamb or Chicken in Gongura paste with herbs and spices unique to this dish and slow cooking with aromatic rice in a clay pot in the clay oven.
